About Me

Hi, My name is Rikke, I'm 36 and the mother of two wonderful girls. I live in Denmark.. I love swapping, especially for recipes, sweets and the likes. I adore cooking and baking, and spend a fair amount of time searching for new recipes online and in cookbooks.. At the moment I'm doing my best to turn my eating habits around - I want to be healthy and more energetic, and I'm convinced the right food will do that for me!! I eat mostly vegetables, fruit, fish, sensible carbs and food with lots of proteins and fibers now-a-days and I'm very interested in finding great ways to use lentils, beans and the likes. I'm generally looking for new ideas for favorite everyday healthy meals.. If you have some great healthy recipes and you're interested in doing a recipe swap - basic healthy, vegetarian or vegan - please PM me!!

I also love painting, reading, listening to music, going to the movies, getting outdoors, spending time with my wonderful girls, my girlfriends, my family or basicly anything that makes me feel happy :-)

Favorite Music

I can't imagine a life without music. In my opinion it's a necessity for being happy. My absolute favorite band is Mew - all their tunes are great and easy to relate to. I like lots of other bands as well mostly the newer Danish bands, but Keane and Coldplay are great too, as is Muse and Eminem for the most part!

My prefered genres would be indie / indie rock / alternative rock - but sometimes I like folk type singer-songwriters too, and instrumental music, but only once and again.

I like acoustic recordings, but unless I'm at the concert, I'm not much into live recordings, at least not if there is a studio recording available.

Favorite Books

I have always enjoyed reading, at the moment I prefer authors as Stieg Larsson, Liza Marklund, Ã…sa Larsson and Elsebeth Egholm.. I think Astrid Lindgren is a wonderful author, as is J.R.R. Tolkien and J.K. Rowling :-)

I love cookbooks - My favorites are those of Jamie Oliver and Nigella Lawson, but I do have quite a collection, of all most anything, specific or general.. I adore spicy food and trying foreign recipes - especially Tex-Mex, Mediterranean or Asian..

And I do LOVE Calvin and Hobbes.. I also enjoy Garfield and Peanuts..

Favorite Movies

Lots and lots :-) A list has to include all movies by Hayao Miyazaki, especially Laputa castle in the sky, Totoro and Kiki :-), How to Train your Dragon, Raymond Briggs The Snowman, The Polar Express, Terabithia, Twilight, New Moon, Eclipse, Mænd der hader kvinder, pigen der legede med ilden, Luftkastellerne der blev sprængt, Harry Potter - all of them, The triologies: The Lord of the Rings, Pirates of the Carribean, Mission Impossible, Bourne, The Matrix.. The Star Wars (new, and old), Crouching Tiger - Hidden Dragon, Hero, House of Flying Daggers, Atonement, Walk the Line, 8 Mile, Proof, A Knights Tale, Save the Last Dance, The Interpreter, The Life of David Gale, Match Point, Man on Fire, Inception, Hachi a Dog's Story and so on...

Favorite Television

At the moment I enjoy watching Criminal Minds, Special Victim's Unit, Ghostwhisperer, House MD, CSI, Greys Anatomy, Private Practice...

I tend to enjoy music/talent shows as eg X-Factor, but I'm not much for reality shows..

Usually if prefer to watch movies at the cinema!

  • Colours: Black, green/lime, blue/turquise and most metallic colours..
  • Chocolates: Rich dark, mint, almond, filled or almost any sort, just love a great chocolate bar, preferably from your country and if it's 70%+ I'll feel great about eating it too:-)
  • Bakery: Muffins, brownies, pies, pancakes
  • Flavours: I love spicy food!!! Chili flakes, curry, garlic, cumin, caraway.. And Vanilla, lemon/lime, raspberry, passion fruit, chocolate, green apple, coffee..
  • Berries: Raspberries, blueberries, cranberries, strawberries..
  • Fruits: Passion fruits, pomegranate, Pineapples, Kiwis, Melons, Avocados..
  • Vegetables: Spinach, bean sprouts, fennels, peppers, garlic, mushrooms, cucumbers, zucchinis..
  • Beverages: Water!! Coffee Latte, Mocha, fruit teas - I guess the red ones especially and VANILLA!!!
  • Fish and shellfish: Salmon, trout, halibut, mackerel, plaice, crab, crayfish, scallops, tuna..
  • Cuties: Koalas, penguins, elephants, Hello Kitty, Paddington, Mr. Men, Calvin & Hobbes..
  • I also love the first snow, snowmen, rainbows, clouds, a starry night...

My Kids

This is the profile for my girls:

Anastasia - my 10-year-old: + She is into manga/anime and most things Japanese :-) + She especially loves to collect cute erasers, like the ones from Iwako.. + She is also quite the collector of Littlest Pet Shop, Build-a-Bear and the "... in my pocket" pets. + She loves animals of all kinds, but bats and wolfs in particular.. + She enjoys movies as Twilight, Harry Potter, Pirates of the Carribean, Star Wars, Corpse Bride and The Nightmare before Christmas and anything Studio Ghibli.. + She loves to draw and is very creative, can make almost anything she sets her mind to, but do enjoy the Top Model drawing books alot and spend hours design clothes for the models. She likes to sow - little stuffy animals and clothing for her Build-a-Bears + She would love to receive ANYTHING with her name on it, as the name Anastasia is uncommon in Denmark, she is never able to buy bookmarks, rulers, pens, nametags or the likes with name prints.

Isabella - My 9-year-old: + She shares the interest in Littlest Pet Shop, Build-a-Bear and cute erasers. + More than anything she is into Hello Kitty!!! To make her happy anything with Hello Kitty goes.. papers, pens, erasers, rulers, stickers, figures, chopsticks, candy, hair acessories, lipbalm, mittens and I could go on forever.. :-) Luckily we live far from Copenhagen, so we have no easy acess to the Sanrio Store, otherwise all her money would be spend there.. + She too is creative and loves to draw and make things herself.. + And she's a sporty girl - loves to play handball and football, riding her bike and playing outdoors.

Both Anastasia and Isabella love to receive mail, is way to rare though, so like me, they are very exited about this site, and the possibility to exchange cute packages with children from around the world. They would love to taste chocolate bars and candy from other countries as well, have no know allergies :-)

Dislikes

I like most things, but foodwise I don't like raisins, figs, prunes, dates and baked beans. Normally not vinegar either. While I LOVE to receive any great recipe, I would never make anything using cake mixes, canned soup or the likes, in that case I would rather order take-away food.
Unless I have signed up for a cake or dessert swap please don't send all sugar recipes, as I prefer to live mostly sugar-free. And please no Splenda and the likes, I absolutely dislike "light" products and I would rather go without the sweet taste in things, than substitute sugar with artificial sweeteners!!!! I wouldn't be thrilled to receive political or religious stuff, but I'm not easily offended.

My Wish List

It's not that I'm particularly picky, but here is a list of things that I will definitely appreciate :-) + I love recipes - recipes will always be more than welcome, healthy ones particularly!! Or if you have some great gluten-free and/or dairy-free ones... Spicy food too!! + If you own the recipe for the absolute best spyngy 'n' moist double chocolate muffins I would be forever grateful ;-) + Chocolate chips :-) Any kind.. + Chocolate bars and Candy, preferably local, organic, rich dark 70%+ or sinfully yummy treats as eg the British Cadbury Caramel Bar or the Mississippi Mud Pie (If you send me world-wide brands as M&Ms, Mars, Snickers, Twix, Bounty, Kitkat's or Malteser's I'll be disappointed and I'll gift them away..) + Anything Hello Kitty!!! It would make my youngest extatic and my oldest would love things Twilight, japanese or just Kawaii animal stickers and the likes - I would appreciate stuff for them just as much as things for myself, probably even more if doing a profile surprise swap.
+ Kawaii items in general - so cute, and again something my girls would love as well. + An ice scooper - would be great for making cup cakes :-) + Cartoons in English, clippings from news papers or magazines would be great, preferably Calvin & Hobbes, Peanuts, Garfield or the likes.. + Anything Mr. Men + Would love tips on how to easily remember English grammar as well - would be great for the girls :-) + Cute manga + If you're creatively gifted a homemade kawaii item would be absolutely fantastic!!! + Lipsmackers w/sweet or fruity flavors + Kawaii Chopsticks
